THREE TEST MILKS HAVE BEEN SUBMITTED TO ULTRA-HIGH TEMPERATURE TREATMENT AND STORED AT 278 AND 298 K (5 AND 25 DEG C) UP TO 32 WEEKS. TEST MILK I WAS FRESH WHEN IT WAS HEAT-TREATED, TEST MILK II HAD BEEN STORED FOR 72 HOURS AT 277 K (4 DEG C) AND TEST MILK III HAD BEEN INOCULATED WITH MILK ENRICHED WITH PSYCHROTROPHS PREVIOUSLY. A COMPARISON OF TEST MILK I AND II SHOWED THAT COLD STORAGE DID NOT RESULT IN SIGNIFICANT DIFFERENCES. THE COMPARISON BETWEEN TEST MILK III AND THE OTHER TEST MILKS GAVE VARIOUS DIFFERENCES (STRONGER PROTEOLYSIS). HOWEVER ITS ACTIVITY HAS NOT REACHED THE LIMIT BEYOND WHICH IT CLEARLY DETERIORATES THE KEEPING QUALITY OF UHT MILK.
