Summary

INITIAL PSYCHROTROPH COUNTS WERE CORRELATED WITH SHELF LIFE OF PASTEURIZED MILK DETERMINED AT A NUMBER OF STORAGE TEMPERATURES. INITIAL PSYCHROTROPH COUNT WAS ALSO CORRELATED WITH A BACTERIAL COUNT CARRIED OUT ON MILK AGAR CONTAINING CRYSTAL VIOLET PENICILLIN AND NISIN AFTER PREVIOUS INCUBATION OF THE MILK AT 288 K (15 DEG C) FOR 25 HOURS. SHELF LIVES AT 4 PRESET TEMPERATURES: 275, 279, 283 AND 287 K (2, 6, 10 AND 14 DEG C) COULD BEST BE PREDICTED BY PRE-INCUBATION OF PASTEURIZED MILK AT 288 K BEFORE INOCULATION ON MILK AGAR.
