Summary
Doctors are increasingly criticizing the "total hygiene" approach which is leading to reduced product quality (particularly in the case of "living" products) and also, long term, is causing reduced immunity in consumers. A French association (Association pour la Sauvegarde du Patrimoine Fromager [ASPF] - Association for the Preservation of the Cheese Heritage) interviewed professors in a number of major hospitals in Paris concerning this trend.
