A METHOD IS PRESENTED FOR THE NUMERICAL CALCULATION OF UN-STEADY CONDUCTION IN BEEF CUTS, IN SMALL HOUSEHOLD FREEZERS. THE TEMPERATURE PROFILES AND FREEZING TIMES OF BEEF CUTS, WHICH ARE OF A RECTANGULAR SHAPE CAN BE CALCULATED. THREE-DIMENSIONAL HEAT TRANSFER IS TAKEN INTO ACCOUNT IN THIS CALCULATION. THERE IS A SATISFACTORY CORRELATION BETWEEN THEORETICAL AND EXPERIMENTAL RESULTS.
