SATISFACTORY RESULTS OBTAINED IN THREE-YEAR TESTS SHOWING THAT FREEZE-DRIED STARTERS, MADE UP OF SEVERAL PURE STRAINS, ARE SUITABLE FOR THE PRODUCTION OF TOMMES DE SAVOIE WITH GOOD ORGANOLEPTIC PROPERTIES, WITHOUT PROFOUND CHANGES IN MANUFACTURING PROCESS (MECHANISED OR SMALL-SCALE). WITH VERY LOW AMOUNTS OF STARTER AND A SUITABLE TECHNOLOGY, IT IS POSSIBLE TO REDUCE THE TIME OF KEEPING IN THE TANK TO 1.15 HRS AND THE TIME OF KEEPING IN BRINE TO 12 HRS. G.G.
