Use of flux meter-attached plastic transducers for on-line measurement of heat transfer coefficients in freezing processes.

Summary

The paper presents a fluxmeter-attached plastic transducer for the on-line measurement of heat transfer coefficients in freezing equipment. The transducer was evaluated under static conditions in the range of 0-7 m/s air speed. The mean coefficients derived from the instantaneous heat flux and surface temperature measurements were compared with those numerically calculated by regression analysis of the internal temperature history in the instrument. Furthermore the transducer was coupled to an anemometer and used to map axially and transversally the air speed and the heat transfer coefficient profiles in a prototype freezing tunnel. Values for the global heat transfer coefficient (bottom side) and for the effective surface heat transfer coefficient (air exposed surface) were also validated by numerical calculation.
