Summary
THE RESULTS OF THEORETICAL AND EXPERIMENTAL STUDIES OF MASS TRANSFER DURING FREEZE-DRYING UNDER VACUUM IN THE PRESENCE OF A PRESSURE GRADIENT IN THE LAYER OF GRANULATED MATERIAL ARE GIVEN. A CALCULATION METHOD IS PROPOSED FOR VAPOUR TRANSFER COEFFICIENTS ALLOWING FOR THE VARIATION OF PRESSURE AND THE FLOW CONDITIONS OF VAPOUR ACCORDING TO THE LAYER HEIGHT. THE TEST VERIFICATION MADE ON CALCIUM NITRATE POWDER SHOWED THAT THE CALCULATION METHOD AGREES SATISFACTORY WITH THE TESTS. THIS METHOD CAN BE EXTENDED TO THE DOMAIN OF LIQUID OR PASTY FOODSTUFFS.
