Summary

Water sorption of various freeze-dried milk products was modelled using several water sorption isotherm models. Sorption models were fitted to experimental data using linear and non-linear regression analysis. Most models applied in the present study can be used to predict water sorption and to evaluate its effects on storage stability of dehydrated milk products.
