Summary

Leuconostoc gelidum was identified as the cause of an unusual 'neon-yellow' discolouration of the natural casings of prepackaged refrigerated German 'Weisswurst', a Bologna-type sausage produced without nitrite. The causative bacterial strains were not pigmented but produced a diffusible yellow compound which stained both casing and the sausage surface beneath the casing. At present, the chemical identify of the yellow compound remains unclear. It is hydrophobic in nature and has a molecular weight which is lower than that of pork fat (<800 Da).
