This special issue of the Postharvest Biology and Technology Journal presents 13 papers presented at this symposium, held in Beltsville, Maryland, USA, May 4, 1998. Extract from the table of contents: effect of temperature and relative humidity on fresh commodity quality; effect of ethylene on quality of fresh fruits and vegetables; effect of O2 and CO2 partial pressure on selected phenomena affecting quality; incidence, contributing factors, and control of bacterial pathogens in produce; effects of post-processing handling and packaging on microbial populations; sensory analysis and instrumental measurements of short-term stored tomatoes.
