Summary

The author studies the different parameters that characterize the atmosphere in a food-processing workplace, that is to say temperature, hygrometry, air distribution, particle content in air, pressure, gas content. The way in which results are obtained is described with its advantages and disadvantages. Performance control and equipment washability are dealt with.
