TWO CONSIDERATIONS DETERMINE THE STORAGE CONDITIONS OF FROZEN FOODS: REDUCING WASTE, IMPROVING THE ENERGETIC EFFICIENCY OF PLANT. IN ORDER TO FIND A COMPROMISE IT IS NECESSARY TO USE MODELS OF QUALITY CHANGE OF FROZEN FOODS UNDER FLUCTUATING TEMPERATURE STORAGE CONDITIONS. THE MODEL PRESENTED MEETS THREE REQUIREMENTS: TO DEVELOP AN EXPRESSION FOR PREDICTION OF STORAGE LIFE AT CONSTANT TEMPERATURE ; TO DEVELOP A PREDICTION METHOD FOR STORAGE LIFE WITH FLUCTUATING TEMPERATURE ; TO PROVIDE AN APPROPRIATE JUSTIFICATION FOR THE METHOD.
