Quality loss in stored frozen products due to temperature fluctuations. Prediction by means of Z transfer functions.

Summary

The implementation of a test chamber with programmable automatic control is described. It is intended for tests on stored products during which the thermal response of stacks of frozen foods submitted to different fluctuations in air temperature is measured. In a first step the response to a standard signal is registered, which makes it possible to evaluate the transfer function of the stack. In later tests different signals (fluctuations in air temperature) are produced and the respective responses are measured. These experimental responses are compared to those predicted using z-transfer functions, in order to determine the validity of this prediction method.
