A simple and accurate approximate method for the prediction of cooling and heating times of regularly shaped foods.

Summary

The variation of temperature with time during the cooling or heating of solids can be accounted for by a simple exponential equation when dimensionless time is sufficiently long. This equation can be easily rearranged to predict cooling or heating times. Notwithstanding several parameters appear, whose calculation is not simple and they are only available in literature for restricted working conditions. It is then important to obtain, based on exact solutions, simple prediction equations that do not need for those parameters. Such equations were developed for infinite plane plate (slab), infinite cylinder and sphere.
