Recommended methods for food refrigeration process design.
Author(s) : LOVATT S. J., MERTS I.
Summary
Based on the experience of carrying out process designs at the authors' company, and in teaching food refrigeration process design to students, a collection of consistent methods has been recommended for predicting food chilling and freezing times, heat loads during chilling and freezing, and the non-product-related heat loads that were found to be the most important in the food refrigeration processes studied by the authors.
