A simple model for the temperature-buffering effect of palletised products in refrigerated stores.

Summary

A two-zone, lumped-parameter model for heat transfer between palletized product and cold-store air with fluctuating temperature was developed. Model predictions agreed closely with finite-difference predictions for solid product. Testing for pallet of apple cartons with air ventilation holes suggested that empirical adjustment of the heat transfer parameters was required to account for the existence of accelerated heat-transfer rates due to air movement.
