A study of the influence of pasteurization and membrane filtration on the quality of Swedish lager beers.
Author(s) : HAERNULV B. G., LARSSON T.
Type of article: Article
Summary
Effect of these two treatments on the organoleptic quality of beers with different alcohol strengths and different initial oxygen contents, stored at 4 deg C. No difference was found between pasteurized and membrane-filtrated beers. Pasteurization is recommended, due to the storage and supply conditions in Sweden.
