Summary

Evaluation through electrophoresis and calorimetry, of the effects of freezing and cold storage on pork proteins. Gel electrophoresis seems well adapted to the study of protein denaturation. No significant change in the electrophoretogrammes is noted, during a cold storage time of several months.
