Effects of preparation procedures and long term storage on the shelf-life of prepared vegetables packed in polypropylene film.

Summary

The effects of washing, film microperforation and intially modified atmospheres on the shelf-life of cut Chinese cabbage, cut white cabbage and grated carrots packed in polypropylene films were studied. In addition, the effects of long-term storage of cut Chinese cabbage and grated carrots were determined. Effective washing appeared to be the most important factor in extending the shelf-life of cut cabbages. Long-term storage before processing was detrimental to the quality of the prepared samples, but not to the fresh control samples.
