Summary

The authors investigated the effects of cauliflower juice on Salmonella Enteritidis, verotoxigenic Escherichia coli O157:H7, E. coli HB producing thermolabile toxin, non-toxicigenic E. coli and Listeria monocytogenes, cauliflower juice effectively inhibited the growth of these micro-organisms but was found to be ineffective against Enterococcus faecalis.
