Summary

Microbiological and proteomic analyses carried out on two strains of Escherichia coli - the first being susceptible to cold temperatures (R3), the second being more resistant (I2) - have underlined that an adaptation period of 3 hours at 4 °C increased the strains' resistance to freezing temperatures (-20 °C for 24 hours). This phenomenon is particularly marked for the cold-resistant strain R3.
