Summary
In modern society, the control of health risks is a fundamental requirement, particularly in the context of sensitive food issues. Considerable progress has been achieved over the past 50 years, particularly in terms of cold-chain management. However, the horizon sometimes seems to be receding. It remains difficult to accept that zero does not exist, even as risks of which we were previously unaware are merging. What are the challenges facing us today, and how can we address them?
