Summary
A uniform model for the influence of climate conditions is a necessary prerequisite for the application of predictive modelling of the quality of foodstuffs in supply chains, especially cold chains. A simplified Arrhenius model is able to serve as a generic formulation of quality change, which connects food technology and microbiology in terms of reaction kinetics.
