Maîtrise de la chaîne du froid : une course en plusieurs étapes.

Type of article: Article
Summary
Non-compliance with the cold chain leads to deterioration in the quality of food reaching the consumer. The quality of the product at consumer level thus depends on how it has been stored and transported. When a foodstuff is no longer fit for consumption, it becomes above all a health hazard and is also a liability for the companies concerned, in terms of image, customer loyalty and volume of sales. It is thus of vital concern to all companies handling products to prevent deteriorated foodstuffs from reaching the customer's shopping trolley, given that the customer is less likely than professional practitioners to strictly comply with cold-chain requirements.
