THE MICROBIOLOGICAL TESTS CARRIED OUT ON BEEF SIDES IN 8 SLAUGHTERHOUSES SHOW THAT THE AIR IN THESE MAY PLAY A ROLE IN THE CONTAMINATION OF MEAT AS SOON AS ITS BACTERIAL CONTENT IS HIGHER THAN THAT OF THEIR SURFACE. AMONGST THE FACTORS CONTRIBUTING IN INCREASING THE MICROBIAL POLLUTION OF AIR, WATER APPEARS TO BE A SIGNIFICANT FACTOR ; ONE MAY WONDER ABOUT THE REQUIREMENT FOR WATER-SPRAYING WHICH INCREASES THIS POLLUTION.
