Summary
THE JAPANESE FISHERIES ARE UNABLE TO SUPPLY SUFFICIENT RAW TUNA. BLUEFIN TUNA IS NOW SHIPPED BY AIR IN A FRESH ICED CONDITION FROM AUSTRALIAN AND NEW ZEALAND CATCHES. THE FISH MUST BE OF VERY GOOD QUALITY AND THE FREIGHTING ARRANGEMENTS CAREFULLY MANAGED TO ACHIEVE AN ACCEPTABLE FISH IN THE JAPANESE MARKET. FISH SHOULD BE LINE CAUGHT AS OTHER METHODS PRODUCE DAMAGE. TRANSPORT IS CARRIED OUT IN INSULATED FIBRE BOXES IN WHICH THE FISH IS ENCASED IN A POLYETHYLENE ENVELOPE TOGETHER WITH A NUMBER OF 1 KG LOTS OF CHIPPED ICE IN POLYETHYLENE BAGS. THE CORE BODY TEMPERATURE MUST BE NO GREATER THAN 278 K (5 DEG C) PRIOR TO SHIPPING. D.W.H.
