Summary

The effect of the main sources of airborne contamination, i.e. the staff and the working environment of the production plant, is discussed. The contributing factors which contaminate the air, coming from these sources include: staff activity in the working area, the ventilation system, drains, cleaning operations and turbulence of the air. For routine microbiological monitoring to maintain the air quality, the following methods are applied: filtration, impingement/impaction, filtration and electrostatics. The influence of the microbiological quality of air on the shelf life of certain dairy products, is discussed.
