Summary
Broiler chicken carcases chilled commercially by the air and water spray (evaporative) technique were subjected to shelf-life test during refrigerated storage in polyethylene bags at 2-4 and 0 deg C. The shelf-life of carcases was determined by sensory method. The microflora of skin and peritonitis was also analysed. Carcase shelf-life until detection of the first symptoms of odour deterioration was: 6 days at 2-4 deg C and 12 days at 0 deg C (more or less 1 deg C).
