Summary
STORAGE IN AIR AT 273 K (0 DEG C) RESULTS IN A DECREASE IN DRY MATTER, ACID AND TANNIN CONTENTS AND INCREASES THE TROUBLE OF EXTRACTED JUICE. STORAGE AT 275.8 K (2.8 DEG C) UNDER CONTROLLED ATMOSPHERE (5.0% CO2 AND 3.0% O2 ) DECREASES DRY MATTER AND ACID LOSSES AND THE OPACITY OF JUICE. THE DECREASE OF O2 LEVEL ENHANCES THESE EFFECTS. THE STORAGE ATMOSPHERE DOES NOT AFFECT THE JUICE YIELD. (Bibliogr. int. CDIUPA-CNRS, FR., 85-210-206192.
