Summary

STORAGE IN AIR AT 273 K (0 DEG C) RESULTS IN A DECREASE IN DRY MATTER, ACID AND TANNIN CONTENTS AND INCREASES THE TROUBLE OF EXTRACTED JUICE. STORAGE AT 275.8 K (2.8 DEG C) UNDER CONTROLLED ATMOSPHERE (5.0% CO2 AND 3.0% O2 ) DECREASES DRY MATTER AND ACID LOSSES AND THE OPACITY OF JUICE. THE DECREASE OF O2 LEVEL ENHANCES THESE EFFECTS.
