Summary

Based on a literature overview, the practical issue of extending shelf life of dairy products by packaging and storage in modified atmospheres are presented. The advantages of using modified atmospheres for packaging cheese, sour cream, yoghurt, liquid milk and milk powders as well as raw milk during storage are described. Special attention has been paid to the improvement of packaging materials and methods used for different kind of cheeses. The commercial application of modified atmospheres for the packaging of hard and semi-hard cheeses as a whole or in pieces, sliced or grated, mould ripened soft cheeses and unripened cheeses (mainly fresh white cheeses) is indicated.
