Summary

The factors and operations that can influence the quality characteristics of citrus fruits before, during and after harvesting, as well as the evolution of these characteristics during the subsequent refrigerated distribution are reviewed. Special consideration is given to fungicidal post-harvest treatments as well as to degreening, and the most recommendable products, doses, residues and application techniques are indicated. The effects of precooling, storage (temperature, relative humidity, air circulation and change, stacking) and transport conditions, are considered together with the influence of the concentration of oxygen and carbon dioxide in the storage atmosphere on the preservation of the most important citrus species.
