Artificial cuts of plums as a method to improve efficiency of drying and storage processes.

Summary

A process is explained, which consists in cutting, in a particular way, plums, before drying, in order to increase the external area of the fruit. Drying time is reduced about to half the normal time, and losses of dry substances are less than 1%.
