Summary
Ascorbic acid in a bentonite suspension was used as a model of a thermally preserved food system. The bentonite was packed in high barrier plastic trays and in metal cans and ascorbic acid retention was evaluated. Storage temperatures of 15, 25, 35 and 45 deg C were used. Results are given.
