Summary

Bacterial flora on endive, curly endive, Webb lettuce and chioggia salads were studied during a year. The study pertains to salads used for the ready to use range before decontamination. The levels of contamination are constant and not season-dependent. These levels are the same for the endive, curly endive and chioggia, but generally lower for the Webb lettuce. No Listeria monocytogenes colony was isolated (89 samples taken from 35 groups). Pseudomonas increase and thermotolerant coliforms diminish during salad storage.
