Summary

A discussion on the relevance of predictive microbiology when guaranteeing quality and safety of chilled products is presented. Then the principles of modelling and the main operations which contribute to it are presented. The last step of this modelling, i.e. validation, is the object of particular development because this validation is essential to justify prediction from models. Lastly, a few indications are given about existing and accessible models.
