Belehradek models: application to chilled foods preservation.

Summary

The spoilage and bacterial contamination of foods is of major economic and public health importance. Chilling of food as a preservation technique is a relatively recent development. Pathogenic bacteria have generally been of greater interest. Mathematical models have been recognised to offer potential for predictive, rather than costly diagnostic, detection of spoilage. A number of mathematical models have been proposed. Model formulation is discussed briefly to illustrate the elements of modelling. The Belehradek, or Square Root form is examined in detail.
