Summary

Several strains of Bifidobacterium bifidum, B. infantis and B. longum, grown in skimmed milk, were treated with several freezing methods, prior to 6 months' storage at -30 or -80 deg C. After storage, the effects of freezing rate (quick for liquid nitrogen or slow with air at -30 deg C) on the resistance and fermentation activity of each strain were assessed. Cell viability was more affected by storage time than by freezing rate.
