Summary
The survival and growth of Escherichia coli O157:H7 in skim milk with various total-solid contents was investigated. Samples were stored at 2, 4 or 8 °C for up to 3 weeks. Survival and growth of E. coli O157:H7 was greater in fortified skim milk (raised milk solid levels), particularly under temperature-abuse conditions.
