FRESH FRUITS AND VEGETABLES FORM TWO GROUPS, THOSE WHICH SUFFER CHILLING INJURY IF STORED AT TEMPERATURES BELOW 283K (10 DEGC) AND THOSE WHICH RESIST INJURY DOWN TO 273K (0 DEGC). RESISTANCE TO CHILLING IS DERIVED FROM THEIR WILD PROGENITORS. RESEARCH TO DETERMINE CHANGES IN THE METABOLISM OF CHILL SENSITIVE PLANTS IS DISCUSSED. THE POSSIBILITY OF INCORPORATING CHILL RESISTANCE INTO NEW VARIETIES OF TROPICAL FRUITS IS CONSIDERED. C.R.F.
