THE AUTHOR REPORTS THE EFFECTS OF REFRIGERATION ON LIVING MATERIALS AND CONSIDERS THE CONSEQUENCES OF THESE EFFECTS IN THE PRESERVATION OF FOODSTUFFS ; THESE EFFECTS ARE VERY FAVOURABLE ON THE WHOLE, BUT THEY MAY HAVE SOME DRAWBACKS, SUCH AS THE GROWTH OF PSYCHROTROPHIC MICROORGANISMS IN MILK COOLED ON THE FARM AND THE DETERIORATION OF THE STRUCTURE OF FROZEN FISH MEAT. FRENCH REGULATIONS MAINLY CONCERN THE SANITARY ASPECT. THE POSSIBLE BREAKING OF THE COLD CHAIN RAISES SERIOUS PROBLEMS, AND ALSO THAWING PROCESSES WHICH ARE SUBJECTED TO REGULATIONS OFTEN DIFFICULT TO MEET (E.G.
