Summary
Accurate calculation of the freezing time of foods is important for optimum design and operation of a food freezer. In this article, the freezing times of foods are divided into three stages, which are pre-cooling, freezing and super cooling times. Respectively, dynamic calculation models are constructed for these three stages. Based on the study of finite cyclical foodstuffs, the models were proven to be advisable by comparing the calculated results with experimental data.
