THIS REVIVAL, DESIRED IN FRANCE BY A NUMBER OF DAIRY FIRMS IS POSSIBLE ONLY BY PROVIDING A CONTINUOUS COLD CHAIN FROM PRODUCTION TO THE DELIVERY OF MILK TO RETAIL SHOPS; IT SEEMS THEREFORE THAT THIS LAST LINK OF THE CHAIN SHOULD BE REINFORCED, ALLOWING FOR FRENCH REGULATIONS SPECIFYING THAT AT THE TIME OF DELIVERY TO THE CONSUMER PASTEURISED MILK SHOULD NOT CONTAIN MORE THAN 10 COLIFORMS AND 30,000 LIVING MICROORGANISMS PER CM3.
