Summary

BASING ON THE ANALYSIS OF A GENERAL FORMULA OBTAINED BY THE AUTHOR FOR THE SHRINKAGE OF FOODSTUFFS AND SHOWING THE ENERGETIC NATURE OF MOISTURE EXCHANGE, IT IS SHOWN THAT FOOD LOSS DURING COOLING, FREEZING AND STORAGE IS DETERMINED BY TWO FACTORS: AIR TEMPERATURE OF THE ROOM AND HEAT LEAKAGES. THE VARIOUS METHODS FOR REDUCING LOSS ARE DISCUSSED.
