RIPE FRUIT WERE STORED IN N2, CO2 OR AIR ATMOSPHERES OVER 90 DAYS AT THE AMBIENT TEMPERATURE. AFTER 60 DAY STORAGE, UNDER NITROGEN, THE ASCORBIC ACID CONTENT OF FRUIT HAD DOUBLED, COMPARED TO THAT OF FRESH FRUIT. D-GALACTURONIC ACID IS IDENTIFIED AS THE PRECURSOR OF VITAMIN C.
