HE BRIEFLY SUMMARIZES SOME DATA ON FRESH FRUIT PHYSIOLOGY, EMPHASIZING THE < CLIMACTERIC > NOTION. HE POINTS OUT THE ROLE OF REFRIGERATION IN MOST PROCESSES USED, MAINLY IN COOLING (WITH A TABLE OF THE OPTIMUM CONDITIONS FOR SOME TROPICAL FRUIT AND OF THEIR RESPIRATION HEAT), IN CONTROLLED ATMOSPHERE STORAGE AND IN A FILM (WITH FIGURES).
