Summary

Late-maturing peaches (Prunus persica cv. Dongxuemi) were stored in air, modified atmosphere (MA) and controlled atmosphere (CA) at 1 °C to investigate enzymatic activities, flesh browning, quality attributes and fruit storability during storage periods. The results indicated that CA conditions obviously inhibited enzymatic browning, delayed senescence and maintained the quality of late-maturing peaches.
