Summary

Changes in quality, retinol equivalents and individual provitamin A carotenoids in fresh cut "Fay Elberta" peaches held for 7 days and "Fuyu" persimmons held for 8 days at 5 deg C in air or controlled atmospheres were evaluated. Results are given, as far as coulour, carotenoïds content, and shelflife are concerned.
