Summary

THE COMPARATIVE STUDY OF THE CHANGES IN THE BIOCHEMICAL INDICES OF GRAPES STORED AT 273-274 K (0-1 C) AT A RELATIVE HUMIDITY OF 0.8 TO 0.9, AFTER BEING SUBJECTED OR NOT TO A THERMAL PRETREATMENT AT 353 K (80 C) FOR 60 MIN. , SHOWED THE ACTIVITY OF CATALASE, PEROXIDASE, POLYPHENOLOXIDASE AND ASCORBITASE WAS HIGHER IN UNTREATED GRAPES. DURING STORAGE, GLUCOSE, FRUCTOSE, ASCORBIC ACID, TANNIN AND ACIDITY CONTENTS DECREASE. THESE LOSSES ARE LOWER IN THE CASE OF GRAPES SUBJECTED TO THE THERMAL PRETREATMENT. (Bull.
