STUDY OF THE CHANGES IN THE GLUCID COMPOSITION OF FIVE PEAR VARIETIES DURING 6 MONTH STORAGE AT 273-273.5 K (0-0.5 C). IN ALL VARIETIES THE SUCROSE CONTENT DECREASED AND GLUCOSE CONCENTRATION INCREASED. THE FRUCTOSE CONTENT VARIED DEPENDING ON VARIETIES.
