Summary

CO2 at 3 and 6% delayed the soft stage by 5 and 14 days beyond 3% O2 + 0% CO2 and air storage, respectively. This allowed sufficient accumulation of sugars and acids to reach an acceptable quality. The results suggest that 3% O2 + 3% CO2 and 3% O2 + 6% CO2 atmospheres can extend the storage life of cherimoya fruits stored at 9 deg C by 2 weeks beyond that of fruits stored in air.
